This week for Fun Food Friday we are pondering the question…Chic-Fil-A or Popeyes chicken sandwich? Let us know what you think While both are good, we think making your own at home is even better and pretty easy as well. For this weeks Quarantine Cuisine we are making both spicy chicken sandwiches and buffalo chicken sandwiches. The preparation for both is the same using boneless skinless chicken breasts:
Start by soaking chicken breasts in a spicy egg wash made of hot sauce, siracha hot sauce, buttermilk and egg. Let sit for at least 4 hours preferably overnight. Once marinated, dredge in seasoned flour. We use 2 cups flour, 1/2 cup corn starch, 2 teaspoon of salt, 2 teaspoon of black pepper, 2 teaspoon red (cayenne) pepper, 1 teaspoon of granulated onion and 1 teaspoon of granulated garlic (powder forms of these items are good as well). Once dredged, double dip them in the egg wash and dredge a 2nd time. This will give them that extra crispy coating that makes a fried chicken sandwich a crispy fried chicken sandwich. You can also make this not spicy by leaving out the cayenne pepper and hot sauces in steps 1 and 2.
Using a tabletop deep fryer, fry for 4-5 minutes until golden brown and have an internal temperature if 165 degrees. These can also be fried in a skillet stove top in a ½ inch of oil until golden brown on each side. For buffalo style you can dip them in buffalo sauce (Franks Red Hot and butter) top with blue cheese, red onion, lettuce and tomato. For just a spicy chicken sandwich top with hot sauce, mayo, pickles, lettuce and tomato. Enjoy…Happy weekend and Happy Mother’s Day to all you Mothers out there.
